    •    Pita bread or flatbreads   •    Fresh vegetables: diced tomatoes, shredded lettuce, thinly sliced red onion, and cucumber   •    Pickled turnips or pickles   •    Fresh parsley or cilantro

For the Garlic Sauce (Toum):

    •    1/2 cup mayonnaise (or traditional garlic paste)   •    2-3 cloves garlic, minced   •    1 tablespoon lemon juice   •    Salt to taste

Step 1: Marinate the Meat

In a large mixing bowl, combine the olive oil, yogurt, lemon juice, minced garlic, and all the spices: cumin, coriander, paprika, turmeric, cinnamon, allspice, salt, black pepper, and cayenne pepper. Whisk until you have a smooth, aromatic marinade.

Add the thinly sliced chicken, beef, or lamb to the bowl, ensuring each piece is coated with the marinade. Cover and refrigerate for at least 1-2 hours, but for best results, marinate overnight. Step 2: Prepare the Garlic Sauce

For a crispy finish, broil for an additional 2-3 minutes, keeping an eye on it to avoid burning.

Once cooked, let the meat rest for a few minutes, then thinly slice it. This helps retain the juices, making each bite tender and flavorful.

Step 4: Prepare the Toppings

Shawarma is all about layering flavors and textures, so don’t skimp on the toppings! Dice the tomatoes, shred the lettuce, slice the onions, and cut the cucumbers. You can also slice pickled turnips or pickles, which add a tangy crunch that balances the richness of the meat.

Step 5: Assemble the Shawarma Wraps

To assemble, take a warm pita bread or flatbread and spread a spoonful of the garlic sauce down the center. Layer the sliced shawarma meat over the sauce, then add your fresh vegetables and pickles. Sprinkle with fresh parsley or cilantro for an herbal finish.

Roll the pita tightly around the fillings. If you prefer, you can wrap it in foil to keep it together and make it easier to eat on the go.
